Simple Strawberry Ice Cream

2-4 packs of Chill Bites Freeze-dried Strawberries

1000 ml heavy cream or whole fat milk (can mix 50/50, substitute with coconut milk for vegan option)

200-250 g of granulated sugar (adjust to taste)

Optional: Pinch of fine sea salt
Instructions
Step 1 — Mix the base. On a low heat, warm whichever base you desire with the sugar and a pinch of salt. Do not boil. Once the sugar is dissolved, let it cool.
Step 2 — Make the strawberry macerate. Place the freeze-dried strawberries in a blender or food processor and pulse for 30 seconds until you have a fine, vibrant pink powder. In the same blender add a cup of the warm base into the powder and blend until smooth.
Step 2 — Combine the base. In a large mixing bowl, whisk together the base and the strawberry macerate and whisk until smooth and evenly pink.
Step 3 — Adjust to taste. If you want a sweeter icecream, add more sugar and dissolve. We at Chill Bites Kitchen like our strawberry ice cream tart so we add an extra pack of the freeze dried strawberry. Please also feel free to experiment with the cream to milk ratio. We suggest a ½ cream to ½ milk. Or replace the cream with coconut milk for a vegan option.
Step 4 — Churn or freeze.
With an ice cream maker: Chill the base for 30 minutes, then churn according to your machine's instructions (usually 20–25 minutes) until thick and creamy. Transfer to a freezer-safe container and freeze for 2 hours to firm up.
Blender method: Pour the base into a shallow, freezer-safe container. Freeze for 2 hours and blend in a strong blender until creamy and scoopable. Store in a freezer-safe container for a few hours to firm up.
Step 5 — Serve. Let the ice cream sit at room temperature for 5 minutes before scooping. Serve on its own, in a waffle cone, or topped with a few crushed freeze-dried strawberries for a pretty, crunchy garnish.
